Halloween pumpkin spice muffins 

Ingredients:

  • 2 eggs
  • ½ cup white sugar
  • 230g pumpkin puree
  • 1/3 cup canola oil
  • 2 cups plain flour
    ¼ tsp salt
  • 1 tsp bicarb soda
  • ½ tsp baking powder
  • ½ tsp vanilla essence
  • ½ tsp ground cloves
  • ½ tsp ground nutmeg
  • ½ tsp ground cinnamon
  • 1 tablespoon icing sugar (to dust)

Method:

  1. Preheat over to 180oC.
  2. In a large bowl, mix the eggs, sugar, pumpkin puree and oil.
  3. Sift in the dry ingredients: flour, salt, bicarb soda, baking powder, vanilla essence, nutmeg, cloves and cinnamon. Mix until well combined
  4. Spoon the mixture into a lined muffin tin (filling each to ¾ full)
  5. Bake at 180oC for 25 minutes or until golden brown.
  6. Once cooled, dust with icing sugar.
